I’m all about easy. While I love to entertain, I refuse to spend my time in the kitchen while my guests enjoy themselves without me! This is my favorite go-to appetizer for whenever we need a little ‘nosh’ while waiting for dinner to be ready.
1 8oz. brick of cream cheese (light is ok;
fat-free… oh come on, why bother!)
1/2 bottle cocktail sauce
1 can tiny shrimp
On microwave safe plate, microwave cream cheese until soft – about 30 seconds.
Drain shrimp and mix with cocktail sauce. Pour shrimp/sauce mixture over cream cheese and serve with crackers and a knife for spreading. This doubles very well (photo above is a double batch).
My mother had a zillion versions of this: take a brick of cream cheese, pour salsa over it. Or pour whole-berry cranberry sauce warmed up in the microwave over the cream cheese. But none of them stuck like this one, Stan asks for it every year.
What do you serve for appetizers or ‘small’ food?

Oh I’m highly allergic to shellfish so this wouldn’t work for me. Ugh!
Don’t tend to eat appetizers so can’t share there. Loved to see what everyone else comes up with though.
